The star of Jean de Luz from the Saint Jean de Luz fish auction!
These sardines have reached adult size and are fished in winter in the Bay of Biscay in France. They are larger and less fatty than the usual sardines.
Sardines are prepared by hand using the oldest method dating back to 1804 (the time of the "Penn Sardin"): they are first salted, then dried for 3 days before being placed raw, by hand, in verrines. In this way, they retain all their flavor. They are not fried, which makes them easier to digest.
Our organic olive oil comes from a small mill in Navarre, south of Pamplona. It is made from Empeltre olives.
Sardines, organic extra-virgin olive oil, a pinch of salt and that's it!
No additives, colorings or other perlimpinpins!
A 270g jar is equivalent to about 3 conventional cans. It's resealable and keeps for 1 month after opening, in the fridge.
