The green pepper in grain of Sichuan is very olfactory, characterized by its freshness, it will awaken your taste buds with its notes of spices and lime. Its taste at the end of the mouth can evoke a green tea leaf.
It was Marco Polo who introduced the pepper of Sichuan to the Venetians in the 13th century, following his travels in Asia. This spice is back in force at the end of the 20th century in the kitchen of great chefs around the world. Hardy and resistant to negative temperatures down to -15°, Zanthoxyllum Piperitum is a thorny shrub in the rutaceae (citrus) family, making its harvest particularly delicate. During September-October, small balls covered with a film appear and it is this pod that gives pepper. It is a citrus fruit, cultivated and used as a spice.
From the first harvest, before ripening the fruit, it is ideal with shellfish and fish thanks to its marked acidity. With meats, it will sublimate your poultry and especially the duck. In desserts, its pronounced citrus and lime taste makes it the indispensable partner of your sorbets, fruit salads and chocolate desserts. This berry is used in the mill or whole, it is usually added at the last moment in the preparation, to avoid degrading its fragrance.
