Fished at the height of the season off the coast of Saint-Gilles-Croix-de-Vie, vintage sardines reflect a tradition of excellence that has been perpetuated since 1887. These sardines, with their exceptional fat content (over 12%), are true vintages to be aged for up to 10 years, taking care to turn them over every six months. A decade that allows them to tenderise and candy, an essential ritual for appreciating all the qualities of these precious sardines. Designed and painted by Nantes artist Delphine Cossais, this painting delicately sublimates the new case for the 2020 vintage sardines.
