Aged Asiago cheese is produced with partially skimmed milk and is matured for a period of 3 to over
15 months. It is straw-coloured and is characterized by small or medium-sized cracks. It’s strong and
savory taste, increases with aging it is also called; Mezzano Asiago ( from 4 to 6 months of aging),
Vecchio Asiago ( from 10 to 15 months aging) and Stravecchio Asiago ( over 15 months aging).
