About
An independent family business for three generations, Maison Barthouil is located in the south of the Landes, in the heart of the country of foie gras and at the confluence of the Pyrenean gaves where the precious wild salmon of the Adour go back.
Created in 1929, in Peyrehorade, our house was originally a charcuterie. Over the years, we have continued to produce tasty products, cared for and faithful to the traditions of our terroir.
90 years later, we passionately pursue this fundamental work, with commitments and rigorous choices in terms of breeding technique and artisanal manufacturing. Always in the interest of serving you better and guaranteeing you
tasty products.
Thus, we defend for the duck, a traditional farming model in autarky:
hardy, our ducks are raised locally, outdoors, in small batches, until adulthood. Corn is produced on the farm, and whole grain corn is force-fed. Our recipes are passed down from generation to generation. They are made in small quantities, without colouring or preservatives.
We select the best wild and farmed salmon in the Atlantic. All manufacturing steps are carried out by hand in our workshops, on the edge of the Gaves: peeling, threading and salting always with dry salt of Salies de Béarn. We still smoke all our salmon the old way: suspended, slowly, at low temperature, with alder wood, to reveal the flavors.
